Ingredients
- 1 tbsp olive oil
- 1 onion, diced
- 2 sweet potatoes, peeled and cubed
- 2 cloves garlic, minced
- 2 tbsp chili powder
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 3 cups black beans (2 cans, drained and rinsed)
- 1 can (14 oz) diced tomatoes
- 2 cups vegetable broth
- Salt to taste
Steps
- Heat the olive oil in a large pot over medium heat. Cook the onion 5 minutes until soft.
- Add the garlic, chili powder, cumin, and smoked paprika; stir 1 minute.
- Add the sweet potatoes, black beans, tomatoes, and broth. Bring to a boil.
- Reduce heat, cover, and simmer 30–35 minutes until the sweet potatoes are tender.
- Lightly mash some of the chili with a spoon for a thicker texture.
- Season with salt. Serve with your favorite toppings.
