Banana Oat Pancakes

Three-ingredient pancakes that are somehow fluffy: oat flour, ripe banana, and eggs, with flaxseed for an extra fiber boost.

Ingredients

  • 1 cup oat flour (blend rolled oats)
  • 2 ripe bananas
  • 2 eggs
  • 1 tbsp ground flaxseed
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • Pinch of salt
  • Butter or oil, for the pan
  • Maple syrup and berries, to serve

Steps

  1. Blend the oat flour, bananas, eggs, flaxseed, baking powder, cinnamon, and salt until smooth. Rest 5 minutes to thicken.
  2. Heat a buttered skillet over medium-low heat.
  3. Pour 1/4-cup scoops of batter. Cook 2–3 minutes until bubbles form on the surface.
  4. Flip and cook 1–2 minutes more until golden.
  5. Repeat with remaining batter, keeping pancakes warm in a low oven.
  6. Serve with maple syrup and fresh berries.
