Overnight Chia Oatmeal with Berries

- 1 cup rolled oats
- 3 tbsp chia seeds
- 1 tbsp ground flaxseed
- 1 1/2 cups milk of choice
- 1 tbsp honey or maple syrup
- 1 tsp vanilla extract
- 1 cup mixed berries (raspberries, blueberries)
Steps
- In a large jar or bowl, combine the oats, chia seeds, and ground flaxseed.
- Pour in the milk, honey, and vanilla extract. Stir very well so the chia seeds don't clump.
- Cover and refrigerate for at least 6 hours, or overnight.
- In the morning, stir the mixture — it should be thick and creamy. Add a splash of milk if you prefer it thinner.
- Divide between two bowls and top each with 1/2 cup of mixed berries.
- Serve cold. Leftovers keep 2 days in the fridge.
