Black Bean Burrito Bowl

Everything you love about a burrito, in a bowl: seasoned black beans, brown rice, sweet corn, and avocado with a squeeze of lime.

Ingredients

  • 1 cup cooked brown rice
  • 1 1/2 cups black beans (1 can, drained and rinsed)
  • 1 tsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp ground cumin
  • 1 cup corn kernels (frozen or fresh)
  • 1 avocado, sliced
  • 1 cup shredded lettuce
  • 1/2 cup salsa
  • Lime wedges and fresh cilantro, to serve

Steps

  1. Cook the brown rice according to package directions if not already cooked.
  2. Warm the olive oil in a skillet over medium heat. Add the black beans, chili powder, and cumin; cook 5 minutes, lightly mashing a few beans.
  3. Warm the corn in the same skillet or a small pot.
  4. Divide the rice between two bowls.
  5. Top with the seasoned black beans, corn, lettuce, avocado slices, and salsa.
  6. Finish with lime juice and cilantro. Serve immediately.
